Banana Bread

Does anyone else have the trouble of spelling bananas now without thinking of No Doubt?

Now you do. I secretly buy bananas in hope that they'll go bad, just so I can whip up some banana bread from it. We've had 3 very sad, and very soft, and veryyyy black bananas awaiting my touch-creepy? But I found time last night, at 10:30! :) This particular bread is my favorite, because it just reminds me of my childhood! And, i loved making it when I first came up to Utah, so I just reminisce, you know? And, it has a fruit in it, so you're basically eating really healthy. 

I added some chopped walnuts, and a dash of chocolate chips this time, and man was it good. This morning for breakfast, I cut a pretty hefty slice, and couldn't even drink my Odwalla after, because man was it heavy! But oh so good.

perfect crispness on the outside, with a soft center.


My go-to recipe:

3 or 4 ripe bananas
1/3 cup melted butter
1 cup sugar
2 eggs
1 teaspoon vanilla (but who doesn't add extra? oh...is that just me?)
1 teaspoon baking soda
pinch of salt
1 1/2-2 cups flour depending on consistency
*chocolate chips, coconut, or walnut of your choice

Set oven to 350.

I'm bad and don't mix my dry in one bowl and my liquids in the other, because really, I'm already baking, and don't want more mess. I grab my eggs, bananas, butter, sugar and vanilla, and mix in the KitchenAid. Then, I add the dry ingredients, and mix. 

Pour into a loaf pan, set the timer for 30 minutes. Then check on it, stick a knife in it, and add 15-20 more minutes, and you should be set!

That's it, and you'll have a perfect treat for the next morning... or a midnight snack, because you can't not try it!
