Late Night Snack

Yesterday, as I was browsing through Pinterest, I saw this Reese's Krispies Popcorn from Oh, Sweet Basil. I immediately knew it was going to have to be something my SIL Madison and I make (because let's be honest... i've become even more obsessed with Reese's since I've joined the Z family...that, and ranch..anyways).. So, of course we made it last night. It was super easy, super yummy, and super addicting! I popped white popcorn kernels in my whirly pop with just a tad of coconut oil, so it was actually pretty healthy!... ya. right. 

I didn't really measure the kernels though, so we ended up with 3 ziploc gallon bags full of this crack. So holler-atchergirl if you wanna come pick up some of this goodness! 

I can't wait to make this for when i have an actual crowd, and when I don't feel the need to eat this all.by.myself.

reese’s krispies popcorn
prep time: 2 minutes
cook time: 5 minutes
yield: 6-8 servings
serving size: 1 scoop
reese's krispies popcorn!
ingredients
  • 2 cup peanut butter
  • 2 cup karo syrup
  • 2 cup sugar
  • 2/3 cup popcorn kernals
  • salt
  • 2 cups rice krispies cereal
  • 1/2 cup chocolate chips
  • 2 cups reese's peanut butter cups, chopped
instructions
  1. in a paper bag, add 1/3 cup popcorn , fold over to close, and microwave for 90-120 seconds or until popped. repeat with the remaining bag. in a very large bowl, combine the popcorn and cereal.
  2. in a medium saucepan over medium heat, add the karo syrup and sugar. cook, stirring occasionally until the sugar has dissolved and the syrup is clear. add the peanut butter and stir until smooth and satiny, about 1 minute. pour over the cereal and fold with a wooden spoon to combine. add the chocolate chips and peanut butter cups and fold again. lay out on parchment paper to cool or enjoy warm.
