I was looking back into my recipes for some ideas for dinners this week when I came upon these power balls. I had the itch to make them again, and I'm so glad I did. They're easy and quick, and you can grab them on-the-go!
I was searching for normal dark chocolate chips, and the only thing I could find were chunks, or morsels. I ended up getting morsels and just chopped them up a bit, because I don't really want a ton of chocolate first thing in the morning! (My family is probably thinking-"Wait, did she just say that?!") Anyways... Flax Seed can have a very interesting after taste, but don't let it scare you, because there are some great health benefits! If you're wanting to add them but scared of the taste, subtract some of those seeds, and add more peanut butter! I love using Natural Peanut butter in these because it's SO creamy! And, I love adding that honey to make it sweet!
Here's a perfect recipe for a filling on-the-go breakfast, or afternoon snack!
Here's the recipe I used:
Ingredients
- 1 cup oats
- 1 cup coconut
- ¾ cup peanut butter
- ½ cup chocolate chips (I used dark)
- ½ cup ground flax seed
- ⅓ cup honey
- 1 tsp. vanilla
Instructions
- Mix and refrigerate for 1 hour.
- Roll into balls.
- Refrigerate until ready to eat! No oven required!
**I did not have time to refrigerate beforehand this time, and they still turned out great! Just squeeze the ingredients together if they start to crumble!
