Past Week

This past week, and weekend was another good one. On Thursday we went to the Orem Owlz baseball game with our Pass of all Passes..seriously love those things. I was wearing a white shirt, and it was raining..so for the courtesy for everyone else, I wore a hat so it wouldn't be a total white t-shirt contest, although...I'd love to participate! JK.
 
 
While I was at Costco picking up things for the office, I totallllly got caught. But, I'd say it was pretty worth it.

 
We went to Seven Peaks on Saturday, and it was seriously the brightest day ever.

Once again, love Pass of all Passes. I swear they were made for married people so you can go on fun, free dates. AND! We got $40 back to Wal-Mart. Score.

 
We then got dressed up to try Black Sheep Cafe, but it was an hour wait, and we had a dollar movie to catch! So it resulted in Cubby's, which is always a great choice.
 
On Sunday we went to Tanner's Mission President and wife's Homecoming! It was so great to finally meet them! They are such sweet, incredible people. And, they invited all of us into their home for food! My kind of party!
Now if this week could please stop taking its sweet time, I'd really like for it to be Thursday for our work potluck to be over, for Brooke, Rob & the kids to be here, and for us to leave for Newport the next day!!!

cowboy chicken


On Tuesday I made BBQ Chicken stuffed sweet potatoes, and I found the recipe here. I didn't have all of the items, but it turned out amaziiiiiing.

Ingredients

  • 1lb boneless, skinless chicken breasts, rinsed & patted dry (I did about 7 chicken breasts)
  • 4 sweet potatoes (medium-large in size)
  • 2 cups frozen corn (1 can)
  • 1 (15-ounce) can black beans, drained & rinsed (ended up adding 2 cans)
  • 1/2 large sweet onion, diced (minced onions was all I had!)
  • 1 1/4 cup BBQ sauce (you can never have too much!)
  • 1/2 cup 0% or 2% Greek Yogurt (plus extra for topping ) (Didn't use)
  • 1/4 cup shredded cheese (Mexican blend or your favorite will do!)
  • 1/4 cup fresh cilantro
  • 2 tablespoons white vinegar
  • 1 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 4-6 chipotle peppers in adobo sauce, deseeded and minced (4 for mild spice, 6 for moderate) (I just used 5 pepperoncini)
It's seriously soooo simple. Throw it in the crackpot. My favorite kind of meal. Add the corn after the chicken is done and shredded so it's not mushy, and I added another can of beans, because it didn't look like enough! 

I was so excited to eat these, and we started watching the tsunami movie, The Impossible. It's a bad idea to watch during dinner. I had to take a few intermissions so I didn't lose my dinner. Whew. Was it good. Hysterically crying good, girls or boys. Tears will be down.your.face. Probably won't ever watch it again because I don't think I could handle it once more, but I'm definitely glad we finally watched it. Anyways, I think I didn't enjoy the sweet potato part, because usually I only like sweet potatoes in the fry form.. oops? But, Thinking of this exact meal makes me a little nauseous because it makes me think of the movie, which makes me think of open wounds, and blood. Ok, but GUYS it's really good.

We had chicken left over and made it into a tortilla salad the next night, then stuffed quesadillas the next! I seriously love Crock Pot meals because it's the best. Anyways, hopefully you'll want to make it and not feel nauseous? Probably shouldn't have gone into so much detail!

This last week has just been a really good one. With summer, we have been trying to something fun everyday together, because come Fall and Winter, that doesn't happen with Tanner in school. He has been SO helpful at home for me, he even accepted my HUGE long grocery list after we got back from our trip! What a STUD! After we (I'll say me, because he'll probably punch me) got done crying, we went on a scooter ride to Cold Stone, and got ice cream to cheer up. With a wedding gift card I might add! 

Last night it was raining at night, but we used our Pass of all Passes to go to the Orem Owlz game with Madeline and Andrew, and had a blast. As always with them! 

Our marriage has only gotten better, and it's so refreshing. We got married mid-semester, with my new job position, we were both high-stressed. I'd say our first couple months were hard. I think it always is, unless you kid yourself. Heck! You're living with a stinky boy all of the time! :) It's just hard to get used to someone else, and you learn that every family background isn't the same... you grow up differently, with different "rules"! Anyways, I love Tanner, and love that he is my best friend!

Let's take it to the beach beach..

We got back on Sunday from the annual 4th of July, Carlsbad trip. The day we go home has seriously always been the most depressing day of the year growing up. It was a blast, and seriously couldn't have been any better. Instead of rambling on, I'll let the pictures do the talking...

Fourth of July we spent the night at our new condo this year, not on the beach, which we thought was so horrible, until we found our own personal Hot Tub, grass area inside that cute white fence. It ended up working perfectly for the grandkids, and it wasn't even 10 feet from the public stairs. Score! Love it.

We had hot dogs, Diet Coke, and s'mores like true American's! Watched fireworks on the beach, and celebrated with pop it's and sparklers!

We don't see each other all of the time, but when we get back together for the 4th, it's like no time has passed at all.




Saturday morning the fam went to Ruby's for breakfast, and moved our suitcases over to the Sheraton we had for the night. 
Us sisters showed up in matching skirts! 




We then headed back to the hotel for Rogers shirts, lots of pictures, and Minute to Win It games!

Happy 61st Anniversary! Forgot to add that...that's why we  headed to the hotel, because my parents flew them in for an Anniversary/Reunion/shin dig/party!







We then took 30 minutes to rest, pictures make you tired! Got dressed, and went to a nice seafood restaurant. With Creme' Brulee for Dessert! :)

We all emailed my mom with things we remember my grandparents by, or little words that remind us of them, etc. My grandpa was in tears when he saw it! It's pretty special. 


We then left the next morning after another yummy breakfast, and that was that. Such a great week, as always! Thanks mom and dad!
